The price is not an impolite question
In Thailand I learned that you talk about money once you know each other. You start with a conversation, and the price follows. Here it is the other way round. Someone who cannot find a price does not call to ask — they keep searching.
This has nothing to do with distrust. It is a habit: people want to compare before they invest time. A price such as "from 35 €" is not a commitment, it is an invitation. It says: you are in the right place.
An appointment is a promise
Someone with a three o'clock appointment plans the afternoon around it. Ten minutes of waiting need an explanation; moving an appointment on the same day is a small loss of trust. That is strict, but it has an upside: if you keep appointments, you get recommended. Reliability travels faster here than talent.
In practice: only take as many appointments as you can keep, and publish real opening hours — not the ones you wish you had. A closed door while the website says "open" costs more than shorter hours.
What you should not change
The warmth. It is the reason guests come back, and it cannot be copied. At the start I tried to seem more German — terser, more matter-of-fact — and in doing so I removed exactly what made me distinguishable.
The difference is not in how you appear but in the groundwork: clear information beforehand, a warm welcome afterwards. The combination is rare. That is precisely your advantage.
